Southwest Rotisserie Chicken Salad
Serves: 1
Prep Time: About 10 minutes for 1 salad, if you are cutting everything up fresh
Ingredients
2 large handfuls of spring mix
4oz rotisserie chicken breast, diced
1/4 cup sliced cucumbers
1/4 cup prepared pico de gallo (or tomatoes)
1/4 cup sliced red onion
1/2 an avocado, diced
Ranch or chipotle ranch dressing
Salt & pepper to taste
Instructions
To prepare fresh: Combine all ingredients into a big bowl and promptly devour. 🙂
To meal prep: Increase the amounts proportionally for the number of meals you want to prep for. I find that 1 rotisserie chicken breast is about 4 ounces, so one rotisserie chicken could net you about 2 salads. You could also make this with grilled chicken, as well.

You can find my favorite ranch and chipotle ranch dressings at Whole Foods – the brand is called Cindy’s Kitchen. Sometimes they don’t have the chipotle ranch, so I will just mix their regular ranch with a couple of spoonfuls of adobo sauce from a can of chipotles, and that does the trick. 🙂
