Meal Prep Monday: Sesame Chicken and Rice Bowls

Sesame Chicken and Rice Bowls
Sesame Chicken and Rice Bowls

Ingredients
1 1/4 pounds chicken breast
Salt and pepper
1 head broccoli
2 red bell peppers
Extra virgin olive oil
2 cups white rice, prepared
Annie’s Asian Sesame salad dressing, or your favorite Asian-flavored dressing

Instructions
Salt and pepper your chicken breasts and grill or bake to your liking. Dice, then divide equally into four meal prep containers. (1.25lbs chicken breast should yield about 1lb cooked chicken breast, so it should work out to about 4oz of chicken per meal.)

Preheat oven to 425 degrees F. Cut broccoli into florets and toss into a bowl. Cut red bell peppers into strips and toss into the same bowl. Drizzle with a little bit of extra virgin olive oil, and season with salt and pepper. Pour onto a baking sheet and roast in the oven for about 15 minutes, or until broccoli is to your desired doneness. Remove from oven and set aside.

For your rice: every bag of rice is different. You will want to have two cups rice total once it’s prepared – do not measure 2 cups of dry rice and then cook it! You are looking for 1/2 cup prepared rice for each meal prep portion.

When everything is finished, add 1/2 cup rice to each meal prep container with the grilled chicken. Divide the broccoli and red peppers into four equal portions at least 1 cup each, and add to the meal prep containers.

When it’s time to eat, reheat in the microwave for a couple of minutes. Drizzle with about 2 tablespoons of Annie’s Asian Sesame salad dressing and stir it up. Enjoy!
