A couple weeks ago my girl Jodie over at //Two Lucky Spoons// posted a recipe on Instagram of her Ham Broccoli and Potato Chowder and my mouth instantly started watering. Only problem is, I kinda hate ham (fight me), but I’m also leaning towards vegetarian lately. So I asked her, could I make it without the ham? She said sure – just double up on the veg!
I was so excited to make this soup! And you know, I am really not a soup person at all. But I do like potato soup, and I am always looking for more ways to get broccoli into my diet, so this soup was a very creamy, luscious answer!
I didn’t change much of anything from the original recipe, except mostly to make it vegetarian. I had heavy cream in the fridge, so I used that instead of half and half. I did add one extra potato and probably an extra handful of broccoli, to take the place of the missing ham. I used vegetable stock instead of chicken stock. And I forgot to buy sage, but the soup was still amazingly delicious. I had it for lunch yesterday, and followed her recommendation to reheat it gently so that it doesn’t separate. I heated it in the microwave on 50% power for about 8 minutes, stirring every so often. It was perfect. Oh gosh, it was soooo perfect. I am so excited to add another soup to my 2-soup rotation!!
