Look at this giant plate of food! I heard once tha Look at this giant plate of food! I heard once that you have to “eat to PR”, and considering I just absolutely smashed my previous back squat record, I think the saying is accurate! Two chicken cutlets topped with homemade bruschetta, roasted zucchini, and cous cous for a hearty, balanced, healthy post-PR meal 💪🏼💪🏼 because I’m fueling for the next PR on Thursday now! #eatthefood
Last night we finally got out to @troublesendbrewi Last night we finally got out to @troublesendbrewing and thoroughly enjoyed our dinner!! We tried the tater tot nachos 👌🏼 the smoked and fried mozzarella 🤤 the cacio e pepe pasta special 😍 and the general tso’s fried chicken sandwich 🙌🏼 very satisfied with our experience and can’t wait to bring our kid back, and try all the other dishes on the menu we wanted to eat!! 💖✨

I’ve been wanting to do a @wholefoods favorites I’ve been wanting to do a @wholefoods favorites post for a while bc I looovvveeeeee Whole Foods (ha-ha Whole Paycheck I know I know) but in all honesty they have such great products and here are my favs! I can only find these at Whole Foods where I live, though you may be able to find them at your markets too!

1. @jenisicecreams listen people I may be the only person you know who’s not much of an ice cream person, but I can’t get enough of this flavor! It’s a must have when I have a sore throat or...every 28 days. IYKYK. IJS. 

2. My favorite hummus!

3. @melaniesmedleys this smoked Gouda dip is like a smoked Gouda pimento cheese and it’s insanely good. Perfect for smorgasbord dinner tonight!

4. @lesserevilsnacks Himalayan salt popcorn cooked in coconut oil is like carb perfection in a bag. 

5. @naturesrancher I am also not much of a meatball fan but THESE jawns are TASTY AF. 

6. @cindyskitchen I’m really telling on myself today bc I am also not much of a ranch person 🤣 but this ranch is MY FAV salad dressing. I also mix it with some chipotle adobo sauce sometimes to make a spicy ranch!

7. @lilliesq is the only bbq sauce I buy anymore. They also make a spicy version that I love!

8. @skyvalleyfoods taco sauce is so so good but don’t shake it then flip the cap open right away 🤣 it’s got the right amount of zing without being too spicy or taking over the whole taco. 👌🏼
Ok so funny story time. Picture it: it’s 2000. Ok so funny story time. 

Picture it: it’s 2000. I’m 20 years old. I live with my boyfriend (now my husband) @kinglnz in a West Philly apartment. I am a terrible cook and my best dish is whatever Hamburger Helper was on sale that week at the Bala Cynwyd Acme. 

But I want to TRY to be a good cook, because I am sure that if I become a good cook, my boyfriend will want to marry me. That is clearly the missing piece. 

Somewhere along the way I came into possession of a Betty Crocker cookbook, and found this Mexican Beef and Bean Casserole. And it sounds interesting enough, but I am also a hella picky eater, and don’t like beans. So I start to think about how I could make this recipe without the beans, and I came up with the idea of mixing it with a box of Spanish Rice A Roni. 💡

To say we were obsessed with Spanish rice back then would be an understatement. Sometimes that’s what we would eat for dinner - split a single box of dollar rice. So I thought for sure, this recipe would work, and he would fall to his knees and propose to me right there. 

Well, I went through with my idea, and the recipe WAS delicious, but it would be another 3 years (and many more new recipes cooked) before he found me worthy of a ring. 🤣 

It was the first time I had ever improvised a recipe, and it WORKED! And I was really really proud of that, and it gave me the confidence I needed to keep chasing recipes (and eliminating Hamburger Helper from my kitchen). 

Feeling nostalgic, tonight while cooking this recipe for dinner, I got out that old Betty Crocker cookbook and found the original recipe. And I discovered that I apparently modified it in more ways than one. 🤣

Somewhere along the way, not only did the beans become rice, but:
- the teaspoon of chili powder became TWO TABLESPOONS of chili powder, and
- the oven temperature increased by 25 degrees?? 🤔🤔

The funny thing about this to me is that I really honestly thought the only thing I swapped was beans for rice... but apparently I took a lot more creative liberty (increasing chili powder like 6-fold!) than I originally thought. And they are just such random changes and things I am sure that I didn’t do intentionally. (con’t)

Standard American breakfast: scrambled eggs, sausa Standard American breakfast: scrambled eggs, sausage, and cinnamon toast. And ketchup. And @animalcrossing_official 

Are you a ketchup-on-eggs person? It’s one of the only ways I can stomach eggs cooked like this! (Other than smothered in cheese and slapped between and English muffin.)
