So I am always down to try Paleo recipes because they are grain-free and sugar-free, which I realize sounds icky, but can sometimes be really good! I also love the flavor of coconut oil so when I saw this recipe for //coconut oil fudge//, I was all about it.
This recipe literally could NOT have been easier to make, and, bonus, you may already have all the ingredients on hand. (I did, and that is not typical for me.) It came together very quickly and after a few hours in the refrigerator, I had a delicious, chocolatey, healthy treat at my fingertips!
There is a note in the blog post that you have to keep this fudge cold, and indeed you do. It gets soft pretty quickly at room temperature. But it works just fine as a cold treat – I sliced it up and bring it to work as part of my lunch, so it sits in the fridge till I’m ready to eat it anyway. It solves my chocolate cravings after lunch in a delicious, healthy way!
