This is my favorite way to eat leftover BBQ pork – in tacos, of course!
Per meal prep:
4oz leftover BBQ pulled pork
2 fajita- or soft taco-sized soft tortillas
Toppings (as desired):
Pico de gallo or chopped tomatoes
Sour cream or chipotle ranch dressing
Reheat leftover BBQ pulled pork for about 2 minutes, adding extra BBQ sauce if desired, to keep from drying out. Split the pork in half between the two soft tortillas. Top with all desired toppings, and enjoy!
Note: This meal would probably be higher in fat than a normal salad-style lunch, so keep that in mind when meal planning if you’re counting macros closely.
