Ok so funny story time. Picture it: it’s 2000. Ok so funny story time. 

Picture it: it’s 2000. I’m 20 years old. I live with my boyfriend (now my husband) @kinglnz in a West Philly apartment. I am a terrible cook and my best dish is whatever Hamburger Helper was on sale that week at the Bala Cynwyd Acme. 

But I want to TRY to be a good cook, because I am sure that if I become a good cook, my boyfriend will want to marry me. That is clearly the missing piece. 

Somewhere along the way I came into possession of a Betty Crocker cookbook, and found this Mexican Beef and Bean Casserole. And it sounds interesting enough, but I am also a hella picky eater, and don’t like beans. So I start to think about how I could make this recipe without the beans, and I came up with the idea of mixing it with a box of Spanish Rice A Roni. 💡

To say we were obsessed with Spanish rice back then would be an understatement. Sometimes that’s what we would eat for dinner - split a single box of dollar rice. So I thought for sure, this recipe would work, and he would fall to his knees and propose to me right there. 

Well, I went through with my idea, and the recipe WAS delicious, but it would be another 3 years (and many more new recipes cooked) before he found me worthy of a ring. 🤣 

It was the first time I had ever improvised a recipe, and it WORKED! And I was really really proud of that, and it gave me the confidence I needed to keep chasing recipes (and eliminating Hamburger Helper from my kitchen). 

Feeling nostalgic, tonight while cooking this recipe for dinner, I got out that old Betty Crocker cookbook and found the original recipe. And I discovered that I apparently modified it in more ways than one. 🤣

Somewhere along the way, not only did the beans become rice, but:
- the teaspoon of chili powder became TWO TABLESPOONS of chili powder, and
- the oven temperature increased by 25 degrees?? 🤔🤔

The funny thing about this to me is that I really honestly thought the only thing I swapped was beans for rice... but apparently I took a lot more creative liberty (increasing chili powder like 6-fold!) than I originally thought. And they are just such random changes and things I am sure that I didn’t do intentionally. (con’t)

Are you a ketchup-on-eggs person? It’s one of the only ways I can stomach eggs cooked like this! (Other than smothered in cheese and slapped between and English muffin.)

What’s your fav egg and cheese sandwich?? I’m not a huge fan of breakfast meats, so mine is just, well, egg and cheese. And a touch of mayo and some hot sauce. 🤤 One bonus about working from home is having the time to eat a proper breakfast every morning! 😍🙌🏼
In my last post I mentioned that I’d just gotten In my last post I mentioned that I’d just gotten a Costco membership and was having fun finding all the things to eat. I picked up a few things that I really liked last weekend, and wanted to share them with you!!

1. @veggiesmadegreat I will just say... I am not a fan of eggs cooked to this texture, and I am also not a fan of vegetables, but I have seen these around the interwebz and felt compelled to try. And - I am seriously surprised at how much I liked them! I had two for breakfast this morning (with a little ketchup) and they were tasty. I’m already thinking of different ways to use them - like broken up in a soft tortilla drizzled with taco sauce and a little cheese for breakfast tacos? 🤔 stay tuned!

2. I found these @eandcssnacks on my first trip to Costco and bought two bags on my second trip. I LOVE these. They are a great snack if you want something sweet but also filling. I may or may not have had 5 for breakfast one morning and was full for hourssssss. 🤫

3. I found these little nuggets of love last weekend and they are basically like eating a healthy Almond Joy or Mounds and I’ve grabbed a couple to be my dessert after dinner a few times this week. LOVE!!

FAM. We gotta talk about this bowl of amazing I ju FAM. We gotta talk about this bowl of amazing I just ate for dinner. 

First things first, I just got myself a Costco membership #grownup and I’ve been having all kinds of fun discovering how it’s going to make my meal prep game so much easier. 

I found a 2lb package of paleo chicken meatballs there this morning. Tossed them into the crockpot with three cans of French onion soup. Cooked on low for 4 hours and then left on warm for the rest of the afternoon. When it came time for serving, we pulled the meatballs out and poured the soup into a saucepan and thickened it with a cornstarch slurry. Poured back into the crockpot and let it chill while I whipped up some mashed potatoes (my new specialty) and some roasted broccoli. 

😍😍😍

Easily a new favorite dinner... this will go into my regular rotation for sure!! 🤤
